Drip. Drip. Drip. Thatโs the sound you hear of the maple treeโs sap dripping into buckets. March is maple syrup making time! Foragers (aka Sugarbushers) tap a variety of trees to gather sap and make syrup โ from maples to walnut trees to birches. As a sweetener, maple syrup has half the glycemic load of refined or white sugar, making it a good choice for those of us minding our sugar intake. Itโs delicious of course in pancakes, stirred into coffee, topped over oatmeal and drizzled over ice cream. But I also love it to make Fleur de sel caramels! Click over to my blog to learn more about making maple syrup and get my recipe for maple syrup caramels.
