Tilsiter cheese is named after the east Prussian city Tilsit (today Sowetsk, in Russia). The recipe was originally developed there by Swiss emigrants that fled religious persecution and the plague in the 17th and 18th century. In 1890, Swiss cheese makers took the recipe back to Switzerland and started the production of "Tilsiter Switzerland" in eastern Switzerland
