In the mythology of many ancient cultures, the grape, and the grapevine is regarded as sacred. From an exoteric principle, the symbolic meaning of grapes relates to abundance, inner transformation and fertility, but also are symbolic of the dangers of debauchery and intoxication.
Grapes are an important symbol in Christianity. In Christian religious services, wine also serves an extremely important role. It symbolizes the blood of Christ, reminding Christians of how Jesus sacrificed himself to atone for their sins. It is also used to commemorate the Last Supper, as Jesus himself referred to wine as his blood and unleavened bread as his flesh during his final meal with his disciples.

I don't really know if I'd say I like him now, because he has simply lost his memories, he didn't really get a redemption like Douglas for example. He's not a better person, it's just that he doesn't remember the bad actions he did. So I'm still wary of him in general, but for now he's just a funny guy, hanging around ahah.
I expect him to get his memories back, because otherwise I don't really see a point of having him there. Like atm he has no intel, the only thing he can contribute to the story is maybe his soot power, but it seems a lame reason considering how many other powerful abilities there are (and honestly there's a big chance he doesn't even know he has a soot power). So yeah, definitely expecting him to get his memories back.
At that point it will be interesting to see what he does. Will he betray the kids? Will he stay on their side? Will he be in a grey area? He doesn't really have anything to gain going back to the adults, they literally ate his arm, I doubt they would take him back, but also he would have to change his mind on everything to keep his alliance with Kate. The moral dilemma would be pretty interesting if he stays more or less on Kate's side. All the adults have basically killed a human, maybe not willingly at first, but the ones we've seen so far don't really seem to have regrets about it. So already an alliance with an adult brings its share of moral implications, and Thomas not only did that, but he actively conducted unifications.
It seems he's like captain hook in Neverland, an adult in the children's wing. Will he become an antagonist or not?
