It's cool and healthy, and this Thai Zucchini Noodle Salad is full of great flavors. It's great for a light lunch or as a side dish with your favorite Thai dish.
Ingredients: 2 medium zucchinis, spiralized. 1 carrot, julienned. 1 red bell pepper, thinly sliced. 1/2 cup shredded cabbage. 1/4 cup fresh cilantro leaves. 1/4 cup fresh mint leaves. 1/4 cup roasted peanuts, chopped. 1/4 cup bean sprouts. 2 tablespoons sesame seeds.
Instructions: In a large bowl, combine the spiralized zucchinis, julienned carrot, sliced red bell pepper, shredded cabbage, cilantro leaves, mint leaves, and bean sprouts. In a small bowl, whisk together the dressing ingredients see below. Drizzle the dressing over the salad and toss everything together until well coated. Sprinkle the chopped peanuts and sesame seeds on top of the salad. Serve immediately and enjoy!
