The flavors in this grilled shrimp and tomato pasta dish go so well together. Cherry tomatoes are sweet and go well with the grilled shrimp, and olive oil that has garlic in it gives the pasta more flavor. This meal is simple but classy, and it's great for any event.
Ingredients: 300g shrimp, peeled and deveined. 250g cherry tomatoes, halved. 250g spaghetti. 3 cloves garlic, minced. 2 tbsp olive oil. 1/4 cup fresh basil leaves, chopped. Salt and pepper to taste. Grated Parmesan cheese for garnish.
Instructions: Warm the grill up to a medium-high level. Add shrimp to a bowl and add 1 tablespoon of olive oil, minced garlic, salt, and pepper. Put shrimp on skewers and grill for two to three minutes on each side, or until shrimp is fully cooked. In the meantime, cook the spaghetti until it's al dente according to the directions on the package. Remove the water and set it aside. Warm up 1 tablespoon of olive oil in a big pan over medium-low heat. Put in the cherry tomatoes and cook for three to four minutes, until they start to get a little soft. Toss the cooked spaghetti and tomatoes together in the pan. Take the shrimp off the skewers and put them in the pan with the pasta. Add the chopped basil to the pasta and shrimp, and then toss everything together. If you think it needs it, add more salt and pepper. Grate some Parmesan cheese on top and serve hot. Have fun!
