Ingredients: 1 lb smoked sausage, sliced. 4 large potatoes, diced. 1 onion, diced. 1 bell pepper, diced. 2 cloves garlic, minced. 1 cup chicken broth. 1 teaspoon paprika. 1/2 teaspoon dried thyme. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: In a skillet, heat olive oil over medium heat. Add sausage and cook until browned. Place cooked sausage in the slow cooker. Add potatoes, onion, bell pepper, and garlic to the slow cooker. Sprinkle paprika, thyme, salt, and pepper over the ingredients in the slow cooker. Pour chicken broth over everything. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until potatoes are tender. Serve hot and enjoy!
