For today's edition of @padmalakshmi 's #tastethenation on #texmex & #mexicanfood w/ @crossedties on @hulu ... Tequila-lime chicken tacos topped w/ roasted onions, & homemade tomatillo salsa/salsa verde. Chicken thighs marinated in tequila, lime, some cayenne, paprika, cumin, garlic, oregano, thyme, black pepper, & salt. Then grilled in the oven in a baking tray on top of chopped onions. Reduce leftover marinade, & use for basting chicken while roasting.
