When life gives you dates (during a 14-day quarantine), what else is there to do but bake a date walnut cake. A friend received these vacuum-packed dates and didn’t know what to do with them so she gave them to me. And now, I’m regifting the recipe to you. You’re welcome. ... This recipe was adapted from the date walnut cake from allrecipes.com but I tweaked the ingredients a bit - replacing the white sugar with coco sugar and adding in less raisins. ... DATE WALNUT CAKE 1 1/2 cups water 3/4 cup raisins 3/4 cup dates, pitted and chopped 1 tsp baking soda 1/2 cup butter 1/2 cup coconut palm sugar 2 eggs 1 tsp vanilla extract 1 1/2 cups all-purpose flour 1/4 tsp salt ... 1. Preheat oven to 350F (180C) and flour a 9-inch square pan or a 9-inch round pan. 2. In a saucepan, combine water and raisins. Bring to a boil and cook for 5 minutes. Stir in chopped dates and baking soda. Set aside. 3. Cream together butter and coconut plan sugar until light fluffy. Add in eggs one at a time and beat in slowly. Add the flour, salt and date mixture. Pour into the pan. 4. Bake in preheated oven for 45 minutes. Insert a toothpick to check if it’s ready. If it comes out clean, it is. Remove from oven and set oven to broil or grill. (Just the heat on top) ... For the glaze: 4 Tbsp butter 1/2 cup brown sugar 2 Tbsp heavy cream 1/2 cup chopped walnuts ... 5. Make topping: in a saucepan, melt butter, stir in brown sugar, cream and chopped walnuts. 6. Spread over warm cake and place under broiler until lightly browned, about 3 mins. Cool before serving. ... So glad we made it back to @parkhyattdubai #ThaiKitchen ... We had a delicious Thai dinner on their breezy terrace overlooking the creek. ... #DubaiRestaurantWeek takes place yearly in the spring & happens during @dubaifoodfest It’s when restaurants offer a price-fixe lunch or dinner to encourage diners to go out & try different places for the two week event. ... @kaytodubai is a pop-up restaurant at what used to be the rooftop shisha bar of @jumeirahalnaseem Although Kayto is described as “Peruvian Nikkei”, it should actually be called just “Nikkei” - which is a fusion cuisine using mostly Peruvian ingredients & Japanese techniques, created by the Japanese immigrant community who arrived in Peru in the 19th century. ... The prix-fixe lunch was 125AED++ for two-courses (which is a bit pricey when most other restaurants, even in DIFC, charge the same for a three-course lunch). ... We decided to order a different starter & main course so we could share at least four of the dishes. We chose the tuna tartare on crispy rice (an ubiquitous Dubai starter that is on several menus around town) and the sea bass sashimi. The tuna crispy rice was so far, so typical. The sea bass sashimi was better with the contrast of dried miso for umami & tangy yuzu juice for acidity. ... Main courses came next: a roasted corn-fed chicken in truffle teriyaki sauce & the grilled sea bass, shimeji & shiitake mushrooms in a dashi consommé. Again, the sea bass was perfectly executed - crispy seared skin & flaky fish topped with spring onions, morsels of tempura batter for texture with the flavorful mushroom-dashi broth. The chicken was sadly a banquet style roast chicken dish (the kind served in large weddings) and although ok, was not impressive. The only saving grace of the dish was the side of baby vegetables & sweet corn purée. We finished both anyway as we were hungry but we should have both had the fish instead. Espressos to end our lunch which were served with pistachio truffles, a nice touch. ... Saturday family lunch @themainedxb . I’ve heard about The Maine from several friends but never had a chance to go and try it. We finally went with the kids for lunch today. . Extensive shellfish menu - from oysters to clams to mussels, along with French classics like steak-frites and Montreal classics like poutine. . We shared half a dozen Dibba Bay oysters (and asks for them to be baked Rockefeller style) plus the tuna tartare and wonton crisp. . We chose one starter as a main - the lobster roll with fries, then shared two other main courses: a medium rare steak frites bearnaise and the clam tagliatelle with a side of broccolini. . For dessert, we had the chocolate chip cookie a la mode and the key lime pie which were more than enough to be shared by the four of us. . Service was quick, attentive and friendly. The manager offered us complimentary coffee to end our meal which was a nice touch. . All in all around 200AED per person with soft drinks. There is a weekend brunch menu option for 390AED per person including alcoholic drinks. Another restaurant to add to my Dubai list.
