Tender chicken skewers are marinated in tasty spices in this keto-friendly recipe. They are served with a cool cucumber-garlic yogurt sauce called taratur. This dish is both tasty and good for you, making it perfect for a full meal.
Ingredients: 1 lb chicken breast, cut into cubes. 1/4 cup olive oil. 2 tablespoons lemon juice. 2 cloves garlic, minced. 1 teaspoon paprika. 1/2 teaspoon cumin. Salt and pepper to taste. 1 large cucumber, grated and drained. 1 cup Greek yogurt. 2 cloves garlic, minced. 2 tablespoons lemon juice. 2 tablespoons chopped fresh dill. Salt and pepper to taste.
Instructions: Put olive oil, lemon juice, garlic that has been minced, paprika, cumin, salt, and pepper in a bowl. Put in the chicken cubes and let them sit for at least 30 minutes. Set the yogurt sauce aside while you prepare the chicken. Grate the cucumber and mix it with Greek yogurt, minced garlic, lemon juice, chopped dill, salt, and pepper in a different bowl. Chill until you're ready to serve. Skewer chicken cubes that have been marinated. Set the grill or grill pan over medium-high heat to heat it up. Chicken skewers should be cooked through and slightly charred after 8 to 10 minutes of grilling, turning them over every so often. Chicken skewers should be served with taratur, a cucumber-garlic yogurt sauce, on the side.
