Ingredients: 6 ears of corn, husks removed. 1/2 cup mayonnaise. 1/2 cup sour cream. 1 cup grated Parmesan cheese. 1 teaspoon chili powder. 1/2 teaspoon paprika. 1/4 teaspoon cayenne pepper. 1/4 cup chopped fresh cilantro. 1 lime, cut into wedges.
Instructions: In a small bowl, mix together mayonnaise, sour cream, Parmesan cheese, chili powder, paprika, and cayenne pepper. Spread the mixture evenly over each ear of corn. Wrap each ear of corn individually in aluminum foil. Place the wrapped corn in the slow cooker. Cover and cook on low for 4-6 hours or until corn is tender. Once cooked, carefully unwrap the corn from the foil. Sprinkle chopped cilantro over the corn and serve with lime wedges.
