Ingredients: 500g chicken thigh, cubed. 1 cup coconut milk. 1/4 cup soy sauce. 2 tablespoons curry powder. 2 tablespoons brown sugar. 1 tablespoon ginger, minced. 2 cloves garlic, minced. Juice of 1 lime. Wooden skewers, soaked in water.
Instructions: In a bowl, mix coconut milk, soy sauce, curry powder, brown sugar, minced ginger, minced garlic, and lime juice to create the marinade. Add chicken cubes to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 2 hours, or overnight for better flavor. Preheat the grill to medium-high heat. Thread marinated chicken cubes onto soaked wooden skewers. Grill the skewers for 10-15 minutes, turning occasionally, until the chicken is cooked through and has a nice char. Serve hot with additional lime wedges and a side of peanut sauce.
