SELAMAT HARI NATAL When an arranged Christmas dinner at a Korean eatery was cancelled, Chef/Owner Boon Lai Lim of Mutiara said he had a 3-course Christmas meal waiting. It was an offer I couldn't refuse. For starters, Chef sent out a festive ”Wing Of An Angel”. It’s stuffed with chicken mince and shiitake mushroom, served on a potato mash with a bbq plum sauce. Finger-licking delicious! The braised tofu had a filling of pork mince and served with a piquant sauce. The hit of the night was the steamed halibut, with a topping of preserved mustard greens, ginger, salted plums and tomato. The classic way of steaming fish. Sedapnya! Mutiara is Malay for pearl. Certainly a Malaysian pearl on Ponsonby Rd, Chef Boon Lai has a very loyal clientele and it’s rare for a restaurant to maintain this longevity. I haven't done my weekly shopping yet. I needed to get creative with what I had. I had a couple of blocks of tofu that needed to be dealt with along with a small Savoy cabbage. I looked up a few recipes on stuffed tofu. It's really popular in Asia. I took a bit from each recipe, and made a non traditional filling. I stuffed the tofu with cilantro lime coconut rice, Caribbean spiced walnuts and sautéed cabbage. I dipped it in a batter and fried it up. I served it with a side of tamarind sauce. This isn't something I would make or eat all the time, but the effort was truly worth it. The stuffed tofu was very filling.
