Aloo Paratha or Potato Stuffed Flatbread
A dough is made of whole wheat flour, all purpose flour, salt, oil, and water. Potatoes are boiled and mashed with chopped onions, coriander leaves, and green chillies, powdered spices like cumin, coriander, fenugreek, carom, and dried mango, besides salt and oil.
The potato balls are placed inside the dough balls and rolled into a flatbread and roasted over a skillet with some ghee. Serve hot with yogurt, pickle, ghee or butter.
