Foodie Fast Stir Fry
When I’m looking for something different for dinner but doesn’t take much time/effort and supports my healthy eating goals, I reach for stir fry makings. You can use a broad variety of fresh vegetables, just see what’s in the refrigerator veg drawer. Or, think about swinging through your local Asian grocery store for change of pace fresh healthy fare to throw in your stir fry dinner. Here’s an idea for ingredients to get you started…
splash sesame oil
2 c. carrots, chopped
1 c. yellow onion, chopped
1 c. white radishes or Daikon, chopped (radish tops too if you are in the mood!)
2 c. garlic scapes, chopped
1 c. Italian green beans, chopped
3 T. soy sauce, check for no added sugar
1 - 8 oz. Shirataki spaghetti, drained and rinsed thoroughly
Option: fine grated fresh ginger, sliced almonds or sesame seeds as garnish
In a large fry pan or wok, add oil, carrots, yellow onion, and radishes. Saute until just barely tender. Add garlic scapes and green beans. Continue to saute until the beans are just barely tender. Add soy sauce, shirataki spaghetti, almonds, sesame seeds and ginger at the last, toss and serve hot.
