Well, like most of us, I’m putting on a smile every day and struggling through this. Leading through crisis and uncertainty in my day job, keeping my family happy, healthy, and sane, homeschooling, caring for friends who are so much harder hit by this than I can imagine. Today was not a good day. I said it. I hope there will be good days in this, like all of us, but today was not one of them. So I made risotto. Adapted from the Williams-Sonoma recipe for risotto with pancetta and winter greens, I made it #ketofriendly with a swap of cauliflower rice. Used half the broth, but double the flavor thanks to a switch to mushroom stock I had made in the freezer.
