This Slow Cooker Chunky Beef and Potato Stew is a hearty and comforting meal perfect for chilly days. The tender beef, potatoes, and vegetables simmer in a flavorful broth, creating a deliciously satisfying dish.

Ingredients: 1.5 lbs beef stew meat, cubed. 4 potatoes, peeled and diced. 3 carrots, sliced. 1 onion, chopped. 2 cloves garlic, minced. 1 can 14.5 oz diced tomatoes. 4 cups beef broth. 1 tsp dried thyme. 1 tsp dried rosemary. Salt and pepper to taste. 2 tbsp cornstarch optional, for thickening. 2 tbsp water optional, for cornstarch slurry.

Instructions: Put diced tomatoes, onion, garlic, beef broth, thyme, rosemary, salt, and pepper in a slow cooker. Add the beef. There should be no leaks. Cook on low for 8 hours or high for 4 hours, until the beef is soft and the vegetables are done. If you want to make a cornstarch slurry, mix water and cornstarch together until the mixture is smooth. Add the flour to the stew in the last 30 minutes of cooking to make it thicker. Enjoy while hot!
