Ingredients: 1.5 lbs chicken thighs, boneless and skinless. 2 cups stout beer. 4 cups chicken broth. 1 onion, chopped. 3 cloves garlic, minced. 3 carrots, sliced. 2 potatoes, diced. 1 cup mushrooms, sliced. 1 tsp thyme. 1 tsp rosemary. Salt and pepper to taste.
Instructions: Place chicken thighs at the bottom of the slow cooker. Pour stout beer and chicken broth over the chicken. Add chopped onion, minced garlic, sliced carrots, diced potatoes, and sliced mushrooms into the slow cooker. Season with thyme, rosemary, salt, and pepper. Cover and cook on low for 6-8 hours or until chicken is tender and flavors are well combined. Serve hot and enjoy!
