A traditional Spanish dish called Migas Con Huevo is made with stale bread, eggs, and seasonings that add flavor. This easy and tasty breakfast or brunch idea is great for getting rid of extra bread.
Ingredients: 4 slices of stale bread, torn into small pieces. 4 eggs. 1/4 cup olive oil. 1/2 onion, finely chopped. 2 cloves garlic, minced. 1/2 red bell pepper, diced. 1/2 green bell pepper, diced. 1/2 teaspoon paprika. Salt and pepper to taste. Fresh parsley, for garnish.
Instructions: Put the olive oil in a big pan and heat it over medium-low heat. Put in the chopped onion and garlic, and cook for about two to three minutes, until the onions turn clear. After you add the diced bell peppers, cook for another two to three minutes or until the peppers start to get soft. Add the paprika and the pieces of torn bread. For about 5 to 7 minutes, stir the bread often while it cooks until it is toasted and crispy. Make four small holes in the bread mix and put an egg in each one. It will take about 4 to 5 minutes of cooking with the lid on the pan until the egg whites are set but the yolks are still soupy. You can add salt and pepper to the migas con huevo to suit your taste.
