By all rights, Beau's The Spice Principle should be an undrinkable mess. I mean, a weissbier made with 12(!!) spices including cumin, turmeric, black pepper, and mustard? Not something that screams – or even politely suggests – that it will be a tasty and refreshing beverage. And yet, and yet – it’s not bad. In fact, I’d go so far as to say that it’s rather good. The base beer is a well-made weizen, with the expected notes of banana and clove, and the dozen spices are nicely integrated and balanced, offering a progression of flavours across the palate – cinnamon here, cardamom there, coriander in-between – with the pokey ones like pepper, ginger, and cayenne providing a pleasant hit of heat in the finish. It’s not something I’d drink every day, but as a flavour experiment, it’s a success.
