After leaving it to cool overnight, also I let it stay in the Dutch oven and covered it to see if the crumb is moist.. turns out, the crumb is moist just right, not dry and gummy.. Using my new ufolame @wiremonkeyshop to score this sourdough loaf. Hmm .. I’ve been making a few sourdoughs bread this couple weeks.. I am curious, is the bread supposed to be dry? My bread is slightly dry, but springy. When I reheat it, it’s gotten slightly moist which I like. 80% Bread Flour + 20% Whole Wheat Flour.. filling raisings and walnuts. The bread open crumb is quite soft, but the outer is charred but not bitter.. probably need to preheat the Dutch oven at 475F instead of 500F.. or cut the time slightly.. Yeay!!! Am happy with the outcome of my earlier sourdough bread!! Yeay!! Finally, the bread sprung!! After do many tries, I figured out what’s wrong with my sourdough bread that never reach oven spring the way I want it .. I’ve got weak starter.. so I kept watching @fullproofbaking YouTube channel about her starter maintenance, and decided to play with the ratio: 1:1:1 then 1:2:2 .. still my starter was kind of weak.. then I change the way I measure it.. initially, I use weight method then I just use the spoon method.. the spoon method works for me.. I up it to 1:5:5 then I lower the ratio to 1:3:3 and after 4 days, my original starter started to hold its strength at 1:2:2 and didn’t fall at 5 hrs.. and it tripled.. am so excited.. decided to use it, then I tweaked the ingredients by adding 1 tbsp sugar.. happy with the results finally #sourdoughclub #sourdoughbreadmaking #sourdoughbeginners #sourdoughbread it’s resting now, will break it tomorrow morning.. Also, I need to watch my dough while baking..
