Day 30: Italian Beef WellingtonÂ
The last day of the challenge! From the beginning I have said I would make a Beef Wellington, so that is what I made.Â
Beforehand I was a little afraid. This could go great but I could also go horribly wrong. Luckily for me it went awesome. It tasted like a little bit of heaven wrapped in some pastry.
Now that the challenge is over all that is left to do is write a closing post tomorrow and all will be done. Loved the experience of the last 30 days. I learned so much and tasted some amazing dishes. Maybe I should make this into a yearly thing and get people to join me next year. Who is up for some cooking?
Ingredients: 8 Got my meat at the butcher and it was quite expensive, but so worth it.
Snacking: -
Assembling: 8 Took my time making sure everything was right, and it payed off.
End result: 10 I can only say: YUM!

Day 29:Â Beer can chicken
It is almost the last day of the challenge! With the finish in sight I grabbed myself some chicken and a beer can to make this lovely BBQ-dish from Food with friends.Â
I didn't have a BBQ, but it tasted just as great out of the oven. It was crispy on the outside and the meat was lovely moist. It is so simpel, but sure to impress when making dinner for friends.Â
Ingredients: 9 So simple and everything is readily available.Â
Snacking: -
Assembling: 10 Just put everything in and on the chicken.Â
End result: 9 Tastes amazing, but I really want to try the BBQ version sometime.

Day 27: White chocolate rocky roads
When going somewhere new I like to use food as a bay to meet and talk to people. I wanted to do so during a wedding-weekend with this white chocolate. Sadly I started too late and it wasn't ready by the time I needed to go.
To me food is the best way to bond, almost everyone loves it and is willing to try something new. Just ask for their favourite food or what they would make to impress you and you will have new friends in no time. I met some of my best friends through macaroons, cookies and cupcakes.
Ingredients: 7 (+1) I am allergic to coca so I can't really have anything with chocolate, because of that I almost never cook with it. These get a bonus point for using white chocolate (which I can have).
Snacking: -
Assembling: 7 Everything in a bowl and mix it.
End result: 9 Looks lovely and tastes amazing (a bit heavy though). Will make this the next time I am going something new.

Day 28:Â Cucumber strip salad
After being very unhealthy  during an argentinian wedding-weekend I needed something healthy to kick my workweek of. So during lunch I made the cucumber strip salad.Â
From home I brought the sauce and made a small walk to the supermarket for cucumber, coriander and radishes. The smell of the coriander brought out a lot of colleagues wanting to know what I was making/eating.
This was so easy and I love having a fresh lunch. This dish will definitely find it's way back to work.
Ingredients: 8 The sauce ingredients were at home and the rest I bought at the store around the corner from work.
Snacking: - No time for snacking
Assembling: 9 Just one plate and no mess
End result: 9 Looking forward to making this again.

Day 26:Â Adult jelly
In a month I will be moving house, and for the housewarming-party I want to make some fun treats. One of the things I have never done and wanted to try is jelly shots. For the party I will probably do the ones looking like fruit, but right now I tried them out as shots.
For these I used shot glasses I got from a holiday to Russia and in Russia Vodka chooses you. So Vodka - Orange juice it is.Â
Ingredients: 9 Used Siberian Vodka from my freezer. This also came from Russia (because that is the only Vodka worth using ;-)
Snacking: - I didnât want to be drunk before finishing so no snacking this time
Assembling: 9 This was maybe the easiest recipe so far
End result: 7 It didnât set up completely right, but they tasted good and I had a real laugh trying to get them out.

Day 25: Frosted parsnip cake
With the sweet taste of the spiced apple cupcakes still in my mouth I started working on the frosted parsnip cake. I choose this dish because I never used parsnip and I liked the idea of using a vegetable in a sweet dish.
I was very pleased with the end result. It tasted lovely and without the frosting it wasn't even that sweet, which was good. The grilled parsnip strips on top it made it picture perfect.
Ingredients: 7 Had to look around for the parsnip.
Snacking: 7 Tip: Parsnip isn't that nice raw
Assembling: 8 Just like a regular cake, just add the parsnip shavings.
End result: 8 Tasted great. I just don't want more than a small piece, it fills you right up.

Day 24: Spiced apple cupcakes
After the horrible piping on day one I wanted to make another cupcake recipe. This time it were the spiced apple cupcakes. With eight cupcakes I was able to pipe a few really nice ones. After this challenge I will need to keep practicing, but I have a feeling I will one day get good enough to be able to make these a gift.
Apple and cinnamon go together amazing so any recipe with those two ingredients is bound to be good. This one didn't let me down.
Ingredients: 9 Everything was around :)
Snacking: 7 Tried the apple which tasted very nice as well as the batter. The frosting was one of the best I tried yet.
Assembling: 7 It keeps getting better :)
End result: 8 Very lovely only next time I will double the batter or make half as many, because the cakes were a bit small.
