Reposted from @munchin_all_the_time . . To the classic Bengali dish ‘Sondesh’, here’s a twist of mango to it. . Mango Sandesh ingredients: 12 pieces 1 litre whole fat milk 1-2 tbsp sugar (as per taste for sweetness) Puree of 1 mango Juice of 1/2 lemon Cardamom powder A few strands of saffron Method: In a pot, boil the milk. Once the milk has boiled fully, switch off the flame and add the lemon juice. The milk will starts to curdle. (You may need more lemon juice if the milk does not curdle) Strain the milk solids in a muslin cloth with a strainer beneath and wash the solids in running cold water to remove the sour taste. Squeeze the water and hang it till all the water is strained. Now remove this in plate and add sugar and saffron to it. Knead the formed paneer using your palms into a soft and fluffy dough. Next, take a pan and add the mango puree and the paneer mixture. Cook on a medium flame till the mixture starts leaving the sides of the pan. Add the cardamom powder. Cool the mixture and shape it in the desired shape of your choice. Recipe: Boil milk in heavy bottom pan,now add lemon juice,stir continuously,turn off stove,now allow to milk till the milk curdles, drain milk using cloth,rinse cottage cheese with water to remove lemon flavour, drain off all water,now hang cottage cheese in cloth to remove remaining moisture for 30 minutes,after 30 minutes mash well,add sugar and cardamom powder,mix well, now cook on low flame for 2 minutes,turn off stove, after cooling down,mix again,now make small balls and make a dent in centre,garnish it with chopped almonds and pistachios....😋😋😋 (at Brampton, Ontario)
