Right now we are all having to make do with what we’ve got!!!!!! That doesn’t mean we can’t eat good! Last night we had venison enchiladas. I found a can of enchilada sauce in the pantry and that sparked the idea. Had a roll of venison in the freezer but beef or chicken will work too! Made some guac with lime juice and cilantro. Chopped a plum tomato and a white onion. Made taco seasoning with @spiceology chili lime, smoked paprika, and chili powder. ***Fill the tortilla with the meat that was browned in the taco seasoning and olive oil. Roll the tortilla and place in a hot @smitheyironware chef’s pan with olive or grape seed oil. Brown a little. Surround with the enchilada sauce. Top with shredded cheese. Place in the oven for 10 mins at 350. Take it out and top with whatever you want.
