Happy Bengali New Year!
I made Mughlai food to celebrate Poila Boishakh with friends. My Chinese friend brought cucumber salad and homemade yogurt, perfect for a hot day like today, my Egyptian friend brought banana nut cake, and my American friend made her special floral ginger iced tea. Good food, some office gossip lol, summer planning, and more good food to start the new year.
Here's what I made:
Dahi Chicken: Chicken cooked in a yogurt-based sauce with spices, onions, and ginger. I like to add a little bit of mint too.
Paneer Korma: Indian cheese cooked with onions, dried fenugreek leaves, and peas in a mildly-spiced cream and nut-based gravy.
Shah Jeera Pulao: Basmati rice, carrots, and peas cooked with black cumin seeds, cinnamon, cloves, and cardamom sauteed in ghee or clarified butter.
Shahi Tukda: Bread slices deep-fried in ghee, soaked in sugar syrup, and served in creamy, thickened milk flavored with saffron, cardamom, bay leaf, pistachios, and almonds.
