Indulge in these delightfully soft, chewy, and loaded 7-layer cookies, a spin on classic bars. Chocolate chips, butterscotch chips, coconut, and nuts combine to create a symphony of flavors and textures in each bite of these cookies.
Ingredients: 1 cup all-purpose flour. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 1/2 cup granulated sugar. 1/4 cup brown sugar, packed. 1 large egg. 1 teaspoon vanilla extract. 1/2 cup semi-sweet chocolate chips. 1/2 cup butterscotch chips. 1/2 cup shredded coconut. 1/2 cup chopped pecans or walnuts.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a small bowl, whisk together the flour, baking soda, and salt. In a larger mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Stir in the chocolate chips, butterscotch chips, shredded coconut, and chopped nuts. Scoop spoonfuls of cookie dough onto the prepared baking sheet, leaving enough space between them for spreading. Bake in the preheated oven for about 10-12 minutes, or until the edges are golden brown. Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
