Elevate your classic 7-layer cookies by adding a luscious layer of creamy vanilla ice cream on top. This frozen twist on the traditional recipe brings together the beloved flavors and textures of the original, now with an irresistibly cool and indulgent touch.
Ingredients: 1 cup graham cracker crumbs. 1/2 cup unsalted butter, melted. 1 cup semisweet chocolate chips. 1 cup butterscotch chips. 1 cup sweetened shredded coconut. 1 cup chopped pecans. 1 can 14 ounces sweetened condensed milk. 1 pint vanilla ice cream, softened.
Instructions: Preheat your oven to 350F 175C and line a 9x13-inch baking pan with parchment paper. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture evenly into the bottom of the prepared pan to create the crust. Sprinkle the chocolate chips, butterscotch chips, shredded coconut, and chopped pecans evenly over the crust. Evenly pour the sweetened condensed milk over the layered ingredients, making sure to cover everything. Bake in the preheated oven for about 25-30 minutes, or until the edges are golden brown and the center is set. Remove the pan from the oven and let it cool completely on a wire rack. Once the bars are completely cool, spread the softened vanilla ice cream evenly over the top. Place the pan in the freezer and let the ice cream set for at least 2 hours. Before serving, lift the bars from the pan using the parchment paper and transfer them to a cutting board. Cut the bars into desired sizes and serve immediately. Enjoy!
