Ingredients: 2 boneless, skinless chicken breasts. 1 head of iceberg lettuce, chopped. 1 cup red cabbage, thinly sliced. 1 cup carrots, julienned. 1/2 cup red bell pepper, thinly sliced. 1/2 cup green bell pepper, thinly sliced. 1/2 cup mandarin orange segments. 1/4 cup sliced almonds, toasted. 1/4 cup green onions, chopped. 1/4 cup cilantro, chopped. 1/4 cup sesame seeds, toasted. 1/4 cup crispy chow mein noodles optional. For the dressing:. 3 tablespoons soy sauce. 2 tablespoons rice vinegar. 2 tablespoons sesame oil. 1 tablespoon honey. 1 clove garlic, minced. 1 teaspoon fresh ginger, minced. Instructions: Warm up your grill or grill pan over medium-high heat. First, salt and pepper the chicken breasts. Then, grill them for 6 to 8 minutes on each side, or until they are fully cooked. Take them off the heat and let them cool down for a few minutes. Then cut them into thin strips.
