Instructions: Toss the shrimp with the vindaloo paste in a bowl until they are all covered. Put oil in a pan and heat it over medium-low heat. Put in the diced onion and cook until it turns clear. Sear the shrimp in the pan for two to three minutes on each side, or until they are fully cooked. Add the tomato dices and cook for one more minute. Add the coconut milk and let it cook for two to three minutes, until the sauce gets a little thicker. Add salt to your liking. Add chopped cilantro as a garnish before serving.
