The source of this word is the Latin salsus which means “salted”. Presumably because this was a method of preserving meat, salsus gave rise to salsicius, a kind of sausage. This word gives modern French saucisse and saucisson (via Italian according my Maxipoche). Turning the latter into a verb gives saucissonner. The three meanings provided above came about, I assume, because strings of sausages are cut into individual sausages, because sausages are tied up in strings in the first place and because you can easily eat a cold sausage on the go.
