While I was growing up in the 90s , there were only 2 major bakeries in town we would look upto, One was Santhas , other being Eastern. Possibly the oldest one in Trivandrum established in 1940, it derives its roots from possibly the oldest bakery in the Country , Mambally Biscuit Factory in Thalasserry which was established in 1880. Mambally Bapu supposedly established a Borma after learning baking in Burma and baked the first plum cake , using the local spices, cashew toddy and the local banana njalipoovan. The same family has spread out and established K R Bakes in Ernakulam, Cochin Bakery Best Bakers in Kottayam , Tops Bakery in Nagercoil and Santha Bakery in Trivandrum. While the rest of the bakeries have kept abreast with time ,sadly Santha hasn't. So it is nostalgia which drove me to sample their apple cake. It has no apple in it, but the royal icing encasing it is used to look like an apple. The cake inside is moist , with a predominant fruit essence and hints of spice. They also have an Irish cake , which I am curious about. The lady at the counter was very enthusiastic about me clicking the picture and even suggested me the best place to take it.
