The Nullarbor Plain, as seen from the Indian Pacific train on the Australian transcontinental railway. This is 2015, but I was back on-the-ground about 100kms South of here in 2020 and it’s just the same on foot and from the car - dead flat and nothing taller than a man’s knee. Saltbush, bluebush and red sand as far as can be seen.
Next stop was the delightful @publicbrisbane for some fancy eats. Very chill for a Saturday night. Service was great and food came out quite fast. What you see here is the Roasted Lamb Rump and the Braised Pork Belly. Both had some of the most tender meat we have had in ages and the whole dishes just made sense. As a side note saltbush should be used more in Aussie cooking. Finally we got ourselves Chocolate Ganache to top it all off. Very strong flavour but not melded well with all on the plate.
