For your consideration:
Headcanon that Echo has to keep a thermos of hot water on him to drink from at all times, since he runs on steam. He has to replenish his boiler's water supply every so often.
He prefers hot water bc it'll take less time to heat up, so less work for his boiler. he can drink room temp or cold water, but 1. it takes longer to heat, and 2. cold water, especially in large amounts, runs the risk of stopping the boiling, which can make him literally run out of steam and pass out until the boiler can get the steam going again. (Boiler runs on a back-up battery that has stored electricity from the steam)
