This delicious panini features the sweet and juicy flavor of ripe pears combined with creamy goat's cheese, all brought together by a zesty rocket pesto. It's a delightful combination of flavors and textures that will satisfy your taste buds.
Ingredients: 2 ripe pears, thinly sliced. 4 slices of goat's cheese. 8 slices of ciabatta bread. 1 cup of fresh rocket arugula leaves. 1/4 cup of pine nuts. 2 cloves of garlic, minced. 1/4 cup of grated Parmesan cheese. 1/4 cup of olive oil. Salt and pepper to taste. Butter for grilling.
Instructions: Warm up a grill pan or panini press. Rocket arugula, pine nuts, minced garlic, grated Parmesan cheese, and olive oil should all be put in a food processor. Mix the ingredients together until the pesto sauce is smooth. Add pepper and salt to taste. Place the ciabatta slices on a clean surface. Each slice should have a lot of rocket pesto on it. Lay out half of the ciabatta slices and cover them with thinly sliced pears. Then, put slices of goat's cheese on top of the pears. Add the last few slices of ciabatta to make sandwiches. Spread a little butter on the outside of each sandwich. Put the sandwiches in a panini press or grill pan that has already been heated. Cook for about 4 to 5 minutes, until the bread is golden and the cheese melts. Take the paninis out of the pan or press and let them cool for one minute. Then cut them in half.
