The sweet, sour, and roasted flavors in this Tomato Onion and Roasted Lemon Salad go so well together. It goes well with any meal and is a great way to enjoy the fresh taste of ripe tomatoes and the unique flavor of roasted lemon.

Ingredients: 4 large ripe tomatoes, sliced. 1 red onion, thinly sliced. 1 lemon, sliced into rounds and roasted. 1/4 cup fresh basil leaves. 1/4 cup fresh parsley leaves. 2 tablespoons olive oil. 1 tablespoon balsamic vinegar. Salt and pepper to taste.

Instructions: Preheat your oven to 400F 200C. Place the lemon slices on a baking sheet lined with parchment paper and roast in the preheated oven for 15-20 minutes or until they start to caramelize and become slightly browned at the edges. Remove and let cool. Arrange the tomato slices and red onion slices on a serving platter. Tuck the roasted lemon slices in between the tomatoes and onions. Sprinkle the fresh basil and parsley leaves evenly over the salad. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper. Drizzle the dressing over the salad just before serving. Serve the Tomato Onion and Roasted Lemon Salad immediately as a refreshing side dish.
