This roasted red pepper spread is bursting with flavor and perfect for spreading on crackers or dipping vegetables. The combination of roasted red peppers, pine nuts, and garlic creates a deliciously creamy dip that's sure to be a hit at your next gathering.
Ingredients: 2 large red bell peppers, roasted, peeled, and seeded. 1/4 cup toasted pine nuts. 2 cloves garlic, minced. 2 tablespoons extra virgin olive oil. 1 tablespoon fresh lemon juice. Salt and pepper to taste. Chopped fresh parsley for garnish.
Instructions: Warm the oven up to 425F 220C. Put red bell peppers on a baking sheet and roast them in a hot oven for about 25 to 30 minutes, turning them over every now and then, until the skin is charred. Take the peppers out of the oven and put them in a bowl. Put some plastic wrap over it and let it steam for 10 minutes. After the peppers have cooled, take off the skin and seeds. Put toasted pine nuts, minced garlic, extra virgin olive oil, and lemon juice in a food processor and blend them together. Mix until smooth. Add pepper and salt to taste. Put the spread in a bowl, top it with chopped fresh parsley, and serve it with bread, crackers, or vegetables.
