Rainbow Ice Cream Cake is a tasty treat that looks almost too good to eat! A rainbow of brightly colored ice cream is stacked on top of each other to make this dessert, which is great for any event.
Ingredients: 1 quart vanilla ice cream. Assorted food coloring red, orange, yellow, green, blue, purple. 1 cup crushed cookies or graham crackers. 1/4 cup melted butter. Whipped cream for topping. Sprinkles for garnish.
Instructions: Divide vanilla ice cream into 6 equal parts. Color each part with a different food coloring to create a rainbow spectrum. Line a loaf pan with parchment paper. Layer each colored ice cream in the pan, starting with purple and ending with red, freezing for 15 minutes between each layer. Mix crushed cookies or graham crackers with melted butter and press onto the top layer of the ice cream. Freeze the cake for at least 4 hours or until firm. Before serving, remove from the pan and garnish with whipped cream and sprinkles. Slice and enjoy!
