Quesadillas with Foraged Amaranth and Sheep Sorrel
Mexico has a strong tradition of using foraged greens (quelites). Amaranth in particular was a staple and the greens are still foraged and called quintoniles.
I sautéed amaranth greens with a smaller amount of sheep sorrel and a little cilantro in olive oil and minced garlic. I sprinkled on a little cumin, chili powder and salt.
I layered the greens between two tortillas with cheese and crumbled bacon and fried it all to melty, cheesy goodness and served it with guacamole.

Fish Tacos with Quelites (Edible Wild Greens in Mexico)
I’ve been serving tacos of all sorts with sheep sorrel this spring, but tonight I added amaranth greens. Known as quintoniles in Mexico, amaranth is traditionally one of the most important quelites.
This was my first taste of amaranth. It was very similar to spinach and I think my next experiment with it will be to make gomae, a Japanese side dish of vegetables with sesame dressing, most commonly spinach in western restaurants.
