Quesadillas with Foraged Amaranth and Sheep Sorrel
Mexico has a strong tradition of using foraged greens (quelites). Amaranth in particular was a staple and the greens are still foraged and called quintoniles.
I sautéed amaranth greens with a smaller amount of sheep sorrel and a little cilantro in olive oil and minced garlic. I sprinkled on a little cumin, chili powder and salt.
I layered the greens between two tortillas with cheese and crumbled bacon and fried it all to melty, cheesy goodness and served it with guacamole.
