Sweet and savory flavors go well together in these Pulled Honey Sesame Chicken Sliders with Rainbow Slaw. The soft shredded chicken is flavored with honey and sesame, and the rainbow slaw is colorful and crunchy. Great for a party or a casual get-together!
Ingredients: 1 lb boneless, skinless chicken breasts. 1/4 cup honey. 2 tbsp soy sauce. 2 cloves garlic, minced. 1 tsp sesame oil. 1/2 tsp ground ginger. 1/4 tsp black pepper. 12 slider buns. 1 cup shredded rainbow slaw mix cabbage, carrots, bell peppers. 1/4 cup mayonnaise. 1 tbsp rice vinegar. 1/2 tsp sesame seeds. Salt to taste. Black sesame seeds and green onions for garnish.
Instructions: In a slow cooker, combine honey, soy sauce, garlic, sesame oil, ginger, and black pepper. Add chicken breasts to the slow cooker and toss to coat with the sauce. Cook on low for 6-8 hours or high for 3-4 hours until chicken is tender and easily shredded. Remove chicken from slow cooker and shred using two forks. In a small bowl, mix mayonnaise, rice vinegar, and sesame seeds to make the slaw dressing. In a separate bowl, toss shredded rainbow slaw mix with the dressing until well coated. Toast slider buns until golden brown. Assemble sliders by placing a generous amount of pulled chicken on the bottom half of each bun, then topping with a portion of rainbow slaw. Garnish with black sesame seeds and sliced green onions. Serve immediately and enjoy!
