Jalousie (The Remake for the final) Another one I wanted to do for the final was the Jalousie. Now, the original formula called for a combination of green apples & pears. But for this one, I did a combination of both red & green apples, than I ran over the cabinet and created my own little spice mix, added sugar to it. I sprinkled the apples with the spice mix before placing the dough on top to close. I figured that since I was the only one who had done their jalousie different from what the recipe said, that it would be gone and I probably wouldn't have been able to get to try it. So with the scrap that I had leftover from cutting the circles for the pithivier, I created mini Jalousies! Not only did the smell of my product catch the attention of every chef that walked into the lab, but the sight of my mini Jalousies had them in awe! I was trying feeling myself with a high level of confidence. What made it better was a previous chef of mine came into the room and I gave him one of the mini Jalousies. He said it was "bomb" ! He said that it reminded him of the old school McDonalds Fried Apple Pies. It literally took him back to his childhood for a bit and it felt amazing to know I was able to do something like that haha. Luckily I was able to have at least one, and I must say... I loved it! Definitely going to keep this one around.
