Moroccan flavours. I never get tired of those small Moroccan starters. The Moroccan kitchen isn’t spicy like the Indian kitchen. Spices used are very mild and the most common flavours in the Moroccan kitchen is cumin, sweet paprika and black pepper. There’s many other spices being used. It's rare I crave a warm meal during the hot summer months. However, today I really felt like having a tajine, also spelled tagine. It's a typical Moroccan meal cooked in a clay pot. I always have mine with vegetables. I also enjoy fish tajine but will only have that if I'm in a costal town where I can get fresh fish. In Marrakech the most common tajine is chicken, beef, lamb or meat ball tajine. It's always served with bread and the way to eat this dish is without the use of fork and knife but using bread to scoop up the food. I personally love to eat in local Moroccan places, and feel super home in a traditional and simple environment where food is eaten with bread and no fork and knife. If you haven't been to Morocco before or you prefer to eat in tourist restaurants, don't worry - you'll always have your tajine or any other dish served "your way"and you don't have to eat your food using your hands. Personally, I think the best tajine and meals in general are the ones served in local places where locals eat. It might not be super fancy and glamorous but it's authentic, cooked with love and you don't have a massive flow and rush of tourists.
