These Free Range Pork Rolls with Aioli, Peach Salsa, and Honey Mustard Dressing are a great way to enjoy grilled pork, creamy aioli, and sweet and sour peach salsa all in a crusty roll. Great for any event, not just a summer barbecue.
Ingredients: 4 free-range pork loin chops. 4 crusty rolls, split and lightly toasted. 1 cup mayonnaise. 3 cloves garlic, minced. 1 lemon, juiced. 2 peaches, diced. 1/4 cup red onion, finely chopped. 2 tablespoons fresh cilantro, chopped. 2 tablespoons honey. 2 tablespoons Dijon mustard. Salt and pepper, to taste. Olive oil for grilling.
Instructions: Preheat your grill to medium-high heat. Season the pork chops with salt and pepper. In a small bowl, mix the mayonnaise, minced garlic, and lemon juice to make the aioli. Set aside. In another bowl, combine the diced peaches, red onion, cilantro, honey, and Dijon mustard to make the peach salsa. Season with salt and pepper, then set aside. Brush the pork chops with a little olive oil to prevent sticking to the grill grates. Grill the pork chops for about 3-4 minutes per side, or until they reach an internal temperature of 145F 63C. While the pork chops are grilling, spread the aioli on the toasted rolls. Once the pork chops are done, remove them from the grill and let them rest for a few minutes. To assemble the sandwiches, place a grilled pork chop on the bottom half of each roll. Top with a generous spoonful of peach salsa.
