Instructions: Preheat your oven to 375F 190C. Season pork loin chops with salt and black pepper on both sides. Coat the chops with all-purpose flour, shaking off any excess. In an oven-safe skillet, heat olive oil over medium-high heat. Sear the pork loin chops for 2-3 minutes on each side until golden brown. Remove the chops from the skillet and set them aside. In the same skillet, add unsalted butter. Allow it to melt and brown slightly. Add fresh sage leaves to the brown butter and let them crisp up for about 1 minute. Return the seared pork loin chops to the skillet, spooning the brown butter and sage over the top.
