sauteeing with a pistata base
using this garlicky, fragrant base to saute shellfish, fish filets, or easily cooked meats such as medallions of pork adds so much flavor to any mid-week meal. to make the pistata, which can be kept refrigerated for days ahead, do this:
in a small food processor, add in one part chopped shallots and 2 parts whole garlic cloves, skinned. whizz till smooth, add a touch of salt. reserve.
when ready to use, lightly saute your protein of choice in olive oil with more sliced garlic & fresh thyme sprigs. remove the protein from pan. keep the garlic & thyme or discard, that's up to you.
add the pistata to the pan juices to cook. add in, while stirring the pistata, good squeeze of lemon juice, capers, dollop of white wine, ladle of water or pasta cooking water, pepper, and cook gently. add back in the protein, baste, cook thru. check seasoning. add fresh chopped parsely, serve.
