Ingredients: 1 cup Basmati rice. 2 cups water. 4 cardamom pods, crushed. 1/4 cup shelled pistachios, chopped. 2 grapefruits, segmented. 2 tablespoons maple syrup optional, for sweetness.
Instructions: Bring water to a boil in a saucepan. When the water starts to boil, add the Basmati rice and the crushed cardamom pods. Slowly add water, cover, and lower the heat. Let it cook for 15 to 20 minutes, or until most of the water is absorbed. After the rice is done, take it off the heat and cover it for 5 minutes. Put the oatmeal in bowls and top them with grapefruit slices and chopped pistachios. For extra sweetness, drizzle with maple syrup if you like.
