So, I made wasabi mashed potatoes the other day. I realized after I finished eating it all that i did not take a photo... oops. This is a recipe i have been tinkering with for a while now and while this version was really good, still was not perfect. The flavor was way to weak. I found at the market powdered wasabi, and used about a teaspoon of the powder, mixed it with water so it was about a thick paste and let it sit. I cooked the potatoes and mashed them with butter and 1/2 & 1/2. (ran out of milk) then I added the wasabi paste. I thought it would be too strong and it was not at all. It needed at least double the amount which shocked me. Either my wasabi was not very strong or with the milk and potatoes diluted it much more than I expected. I need to more than double the amount to taste the flavor, with out the "my mouth is on fire" feel. Either way still going to keep trying. but maybe I should keep track of my potatoes, butter, cream, wasabi ratios though, but knowing me, I wont. I guess I will have to continue making mashed potatoes till its perfect, oh shucks.
