I’m in the mood for some old vines! This is 100% Pais made by Mauricio Gonzalez Carreño. • • The grapes are from a 150yr old vineyard planted in volcanic, basalt and granite soils and located in Itata/Bio Bio, Chile. Mauricio farms the vineyards organically without the use of pesticides/herbicides and with no irrigation. The grapes are hand-harvested, whole berry fermented in 100+yr old lagar (made of local beach wood) and aged for 3 months on the skins in 80 year old pipa (also made of local beach wood) and tinajas (clay jars). The wine is bottled unfined/unfiltered and with no added sulfur. • • It’s a fresh wine full of raspberry, wild strawberry, nutmeg, rose petals, violets along with soft tannin and tangy acidity.
