A tropical treat, these cute macarons with pineapple filling. They taste just as good as they look, making them the ideal way to add a little cuteness to any occasion!
Ingredients: 2 cups almond flour. 1 3/4 cups powdered sugar. 3 large egg whites. 1/4 cup granulated sugar. Yellow food coloring. 1/2 cup unsalted butter. 1 cup powdered sugar for filling. 1/4 cup pineapple jam. Pineapple-shaped macaron templates optional.
Instructions: In a bowl, sift together almond flour and 1 3/4 cups powdered sugar. Put aside. Beat the egg whites in a different bowl until foamy, then gradually add the granulated sugar and beat until stiff peaks form. Incorporate the sifted almond flour mixture thoroughly into the egg white mixture by folding it in. To get the desired color, add a few drops of yellow food coloring and stir. Spoon the macaron batter into a piping bag and insert the round tip into the bag. Using pineapple templates as a guide, pipe tiny macarons into the shape of pineapples onto a baking sheet covered with parchment paper. After removing any air bubbles by tapping the baking sheet against the counter, leave the macarons to sit at room temperature for thirty to forty minutes, or until a skin forms on the surface. Set the oven temperature to 300F 150C. The macarons should be easily removed from the parchment paper after 15 to 18 minutes of baking in a preheated oven. As the macarons cool, prepare the filling by combining 1 cup powdered sugar, unsalted butter, and pineapple jam and beating until smooth and creamy. After the macarons cool completely, arrange them in size-matched pairs and top one macaron shell with a tiny bit of the pineapple filling. Place another shell on top of it. To allow the flavors to meld together, store the pineapple macarons in the refrigerator in an airtight container for at least 24 hours before serving.
