Ingredients: 2 cups pineapple chunks. 1 cup shredded coconut. 1 cup crushed pineapple. 1/2 cup sweetened condensed milk. 1 cup heavy cream. 1/4 cup powdered sugar. 1 teaspoon vanilla extract. 1 cup vanilla cake, crumbled. 1/2 cup rum optional. Maraschino cherries for garnish.
Instructions: Put pineapple chunks, shredded coconut, crushed pineapple, and sweetened condensed milk in a bowl and mix them together. Put away. Mix powdered sugar, vanilla extract, and heavy cream in a different bowl until stiff peaks form. Carefully fold the whipped cream into the pineapple mixture until everything is well mixed. To make a parfait, put crumbled vanilla cake and the pineapple mixture in serving glasses one on top of the other. If you want, you can add more flavor by drizzling rum over each layer.
