Butterscotch Peanut Fudge is a tasty treat that is both sweet and nutty. You can satisfy your sweet tooth with this easy-to-make fudge or give it as a holiday gift to family and friends.
Ingredients: 2 cups butterscotch chips. 1 can 14 ounces sweetened condensed milk. 1/4 cup unsalted butter. 1 teaspoon vanilla extract. 1 1/2 cups roasted peanuts. 1/4 teaspoon salt.
Instructions: Line an 8x8-inch 20x20 cm baking dish with parchment paper, leaving an overhang on two sides for easy removal. In a microwave-safe bowl, combine the butterscotch chips, sweetened condensed milk, and butter. Microwave in 30-second intervals, stirring each time, until the mixture is smooth and well combined. Stir in the vanilla extract and salt. Fold in the roasted peanuts, ensuring they are evenly distributed throughout the mixture. Pour the fudge mixture into the prepared baking dish and smooth the top with a spatula. Refrigerate for at least 2 hours or until the fudge is set. Use the parchment paper overhangs to lift the fudge out of the dish and place it on a cutting board. Cut the fudge into squares or rectangles as desired. Serve and enjoy!
